Fish - 1" Thick Broiled Cod Filet

RECIPE INFO

Fish:

1 1/2 pounds 1" thick cod filet, or other whitefish, cut into four equal portions of 6 oz.’s each

1 Meyer lemon

4 Tbs butter sliced into 1 Tbs portions
Kosher salt and white pepper

1/4 cup dry white wine

Preheat broiler and place rack on second shelf from broiler unit.

INSTRUCTION

Squeeze half of the lemon over cod filet and sprinkle with salt and white pepper and place on baking sheet. Cut other half of lemon into 4 wedges and place on baking sheet next to filet. Add wine to pan. Top fish with 1 Tbs butter portion each and place under broiler. Broil for 5 minutes and baste fish using pan juices. Broil for 3-5 additional minutes until fish is starting to brown and starting to flake and become opaque inside.
