Kale Quinoa White Bean Soup

RECIPE INFO

1 onion thinly sliced

3 large carrots, medium dice

4 rib celery, medium dice

3 cloves of garlic, diced

1 bunch lacinato kale (or whatever type is available)

1 16oz can navy beans or garbanzo beans (2 cups of home cooked)

1 cup fire roasted tomatoes

1 cup of well rinsed quinoa

2 quarts of stock (chicken or veggie)

2 teaspoons salt or to taste

3 Tablespoons olive oil for sautéing

INSTRUCTION

Sauté onion in olive oil until golden/translucent, about 5 minutes on medium heat. Add carrot and celery and sauté until fragrant. Add the garlic, season with salt and pepper to taste. Add kale, well rinsed quinoa and sauté until the kale is wilted. Add stock, tomatoes and beans and simmer 20-30 minutes until veggies are tender.

Serve with grated Parmesan
